Grandma’s Ricotta Pudding

A comforting dessert made with ricotta, eggs, and a hint of rum, enriched with pine nuts and topped with golden caramel. It is a traditional family recipe created by my grandmother. I’d love to share it with you, so you can bring a little of her warmth to your table.
Ingrediënten
750 g ricotta 100 g pine nuts 5 eggs 150 g sugar 3/4 glass of rum 3/4 tablespoons of sugar + 2 tablespoons of water (for the caramel)
Bereidingswijze
Take a pudding mold and prepare the caramel by adding the sugar and a little water, then place it over heat until it turns golden brown. Let the caramel cool. Beat the eggs with the sugar, then add the ricotta and blend until smooth. Finally, add the rum and the pine nuts. Pour the mixture into the mold over the caramel. Bake in a water bath (bain-marie) for 30–40 minutes at 180°C.
